It is sweeter and more flavorful than regular soba, because a grain of buckwheat is small. So it is expensive but it is delicious!

We can eat some variations of buckwheat. Especially, Oroshi Soba is very delicious. Oroshi is grated radish, so the taste is lightly seasoned and fresh. The combination of grated radish and buckwheat is very good.

Kurikinton

In this article, I want to write about kurikinton, a specialty food of my hometown, Gifu prefecture. Kurikinton is home town foods of Gifu prefecture, Nakatugawa, Ena, Toki and Tajimi.
Kurikinton isn’t kurikinton which is in Oseti dish. Oseti dish’s kurikinton have stickiness but kurikinton don’t have stickiness and have moist. Oseti dish’s kurikinton origin is that kinton means gold. I think kurikinton color is yellow, so looks like money.
Kurikinton is that chestnut mix sugar and boil. Kurikinton is very simple food. My mother sometimes makes kurikinton. Or you can buy kurikinton. Especially, Nakatugawa is famous for kurikinton; Kawakamiya is one of the famous shops.

Famous food I like

Hello! I live in Aichi prefecture. Nagoya city in Aichi is big, so there are many famous foods in Nagoya. They are very delicious, but especially, I recommend Tenmusu to you. Tenmusu is an original rice ball that contains shrimp fritter (tempura). Ten means fritter, and Musu means rice ball. Rice ball is called “Omusubi” in Japan. I wish you want to eat Tenmusu by reading this article.

Tenmusu is a little similar to rice ball. It is easy for you to make it. Tenmusu is invented in Mie prefecture, where is located to next to Aichi prefecture. “Senjyu” which is a restaurant in Mie invented as a boarding meal. Now, this restaurant is a specialty restaurant of Tenmusu. A birthplace is in Mie, but now Tenmusu becomes to be a famous food in Aichi.

A shrimp fritter, rice, laver and little salt are essential ingredients of Tenmusu. About a shrimp, mostly, Southern rough shrimp is used to make it. It lives in Ishikari Bay in Hokkaido. Its length is about 12 centimeters and the best season is summer. It is easy to eat because it is a bite-size. If it becomes cold, it does not fail the taste and is delicious. Also, it is sold as Tenmusu box lunch.

My grandparents lived in Nagoya city, so I often went there to visit them. When we visit my grandparents’ house, they gave me Tenmusu on my way home because it is for them to go to buy it. Also, my mother likes it very much, so she often bought it. Thus, since I was young, I often can eat it, so I like it very much. When you have a chance to visit Nagoya city, please eat Tenmusu!

Ise Udon

In this article, I would like to introduce about Ise Udon, which is types of Japanese thick white noodles. This is a specialty food of my hometown, Mie prefecture. You can eat it in Ise famous for Ise shrine and also in a lot of cities in Mie prefecture. I wish you would try Ise Udon when you came to Mie, Japan by reading this article. Now, I want to tell more clearly.
Generally, Ordinary Udon is about 1 cm in diameter and it has strong “koshi” means chewy. On the other hand, size of Ise Udon is twice so we can be satisfied with little amount of Udon. And also there is no koshi or not chewy. Another different point is tastes. A soup stock is composed of soy sauce, dried bonito, sea tangle and “Iriko”. “Iriko” is kind of laver. It is especially popular in Mie. Like this, ingredients of the soup are almost black, so Ise Udon looks black. However taste is contrary to the looks because they are sweet. Ingredients of Ise Udon are very simple. Only a long green onion is used as topping.
Hoi An in Vietnam, there is traditional noodle so called “Karaou”. It is said that the noodle’s routes is from Ise in Mie. One merchant from Mie came to Vietnam and conveyed a Ise Udon in 17th century. In fact, Ise Udon may popular all of world in different ways and shapes.
I like Ise Udon very much. My mother sometimes cooks at lunch. Many mothers in Mie have own recipe and it has inherited from generation to generation. Of course, people can delicious Ise Udon in Ise. If you go to Ise shrine, I recommend that you go to “Okage Yokocho”, a shopping and food district. You can eat good and traditional Ise Udon there.

Traditional food in my hometown

I would like to talk about Misokatsu, a specialty food of my hometown, Nagoya city, in Aichi prefecture. “Miso” means a substance made from beans, used in Japanese cooking. “Katsu” means a thick slice of meat, especially lamb or pork, which is cooked and served with the bone still attached.”Misokatsu” is “tonkatsu” (Deep fried pork cutlet) with Miso-sauce. This sauce is well known sauce from Nagoya region in Japan. It is a one of the most popular dishes in Nagoya. I wish you could enjoy eating “Misokatsu” more with my article.

First, I will explain about “Misokatsu” recipe. Cut the edge of pork chops in several places. Sprinkle salt and pepper on the pork. Put flour lightly on the pork. Dip the pork in beaten egg. Put bread crumbs on the pork and pat them well. Fry the pork in 320F oil for a few min. Turn over the pork chops and fry a few more min. Take out the pork and put them on a paper towel to drain the oil. Cut each “tonkatsu” into small pieces. Serve shredded cabbage. Put miso sauce on a “tonkatu”. “Tonkatsu” becomes “Misokatsu”.

Second, I want to introduce a famous restaurant in Nagoya. Do you know “Yabaton”? It is a very famous restaurant in Nagoya. If you go to there, you can eat genuine “misokatus”.This is the way they make in Nagoya. You can put miso sauce over the tonkatsu, where everywhere else just uses regular “tonkatsu sauce”.

Finally, I am very proud of having “MIsokatsu” in my hometown. Its reasonable in price and makes “Misokatsu” more familiar. I wish “Misokatsu” would become more popular and more and more people learn about Nagoya.

Hitsumabushi

In this article, I want to write about Hitsumabushi a specialty food of my hometown, Nagoya in Aichi prefecture. Hitsumabushi is a Nagoya dish of strips of boiled eels on rice, and it is one of the typical specialties of Nagoya's local foods called 'Nagoya-meshi'. Nagoya-meshi is Nagoya cuisine, though this was taken not in Nagoya but in Gifu prefecture. I wish you could enjoy eating Hitsumabushi more with my article.

There are several different eel meals and Hitsumabushi is one of them. Hitsumabushi is eel fillets cooked with soy flavoured special source on the charcoal, cut in small pieces and serve on the rice. HITSU is a kind of utensil, in this case meaning a container or a big bowl keeping rice. MABUSHI is noun form of "mabusu." The literal meaning of mabusu is to dust, but in this case, it is to put small pieces of barbecued eel on rice. Though eel may be instantly associated with Hamana-ko Lake, Shizuoka Prefecture, its top production area is actually Aichi Prefecture. Eel is slit open along the belly and grilled whole without steaming - that's the Nagoya style of cooking eel.

First, I will talk about Hitsumabushi’s history. Originally, it was founded in the Meiji era in Nagoya. It was designed to serve for group of people. When the meal was served from a big wooden tub to the large number of the people, it was hard to serve the equal amount of eels to people, therefore the waitress decided to cut the eel fillets into small pieces. At first, the restaurant owner was reluctant to cut high-quality eel fillets into small pieces, however to serve the eel pieces equally to the group of people, it was necessary.

Second, I will tell you how to eat Hitsumabushi. There're 3 ways to enjoy eating hitsumabushi, and the eating procedure is also unique. To begin with, the whole eel dish is divided into four portions. You put the first portion into your bowl and enjoy as it is; then you put the second helping in and put on some condiments (wasabi horseradish, nori dried laver, mitsuba trefoil, etc.) to your taste. The basic spice combination is chopped green onions, grated wasabi (horseradish), and nori (sliced dried laver) seaweed sheet cut into pieces, which go well with grilled eel. Enjoy the changes in tastes. Then you have the third portion in the same manner as the second portion plus green tea or broth poured over it, like o-chazuke soup with rice. And, finally, you can enjoy the remaining portion repeating one of the three methods you liked best!

If you come to Nagoya in Aichi prefecture, I really want you to try Hitsumabushi! I’ m sure you will enjoy it☆

Takoyaki :-)

I want to introduce Japanese famous food “takoyaki”.Tako means octopus in Japanese, and takoyaki are known as octopus balls. Takoyaki is the small and like okonomiyaki. It’s basically a flavored batter with a tiny piece of octopus (tako) inside, and is a quintessential street food snack.
Yaki is derived from "yaku" which simply means "to fry or grill" in Japanese, and can be found in the names of other Japanese cuisine items such as teriyaki or sukiyaki. Takoyaki is the most famous food in Osaka. Also, there are a lot of shops all over Japan. I think most of Japanese have ever ate takoyaki. It is easy to eat so in Japanese festival, a lot of street vendor’s stalls sell takoyaki. I want you to eat takoyaki so I introduce about it.

Making takoyaki at home is something of a recent trend in Japan. Some Japanese held takoyaki party at their home and enjoy eating and making takoyaki. All generations enjoy making takoyaki. It may difficult at first time, but it is very enjoyable. If you want to make takoyaki at home, you should use takoyaki pan. It is sold in many stores.
*Recipe of takoyaki J
Mix flour, dashi soup, and eggs in a bowl to make batter. Thickness of the batter should be like potage soup. Preheat a takoyaki pan and grease the molds. Pour batter into the molds to the full. Put octopus, red ginger, green onion, and dried red shrimp in each mold. Grill takoyaki balls, flipping with a pick to make balls. When browned, remove takoyaki from the pan and place on a plate. Put sauce and mayonnaise on top and sprinkle bonito flakes and aonori over.

I introduced about takoyaki because I like it. Also, I think you will enjoy making and eating takoyaki with your friend, family and so on. Also, I think Osaka is good place to visit. There are a lot of delicious Japanese foods in Osaka.

Traditional food

In this article, I want to write about Oyaki, a famous food of my hometown, in Nagano prefecture. Oyaki are a local specialty that has been eaten in Nagano prefecture since long ago.  They are made by kneading flour -based dough, filling it with ingredients, and then steaming and baking the resulting dumpling according to the chef's preference.  There are a wide variety of variations, and common ingredients include eggplant, mushrooms, red bean past, stir-fried mountain vegetables, dried daikon radish, and spicy vegetables.
Nagano Prefecture's steep mountains and cold climate made rice cultivation difficult and produced poor yields in pre-industrial Japan. Farmers in Nagano turned to buckwheat. The resulting flour was then mixed with water and stuffed with local wild vegetables and seasoned with soy sauce and salt.
We can buy in Nagano everywhere from supermarkets to oyaki specialty shops. It is reasonable. Also, we will able to make it at home.
My grandmother often makes it when I am back my hometown. I help her, but I can not remember how to make it completely. I want to make it for her in future.

Your Second Essay

Please introduce your local food to your international partner.

You mix Koshian, Zyousinnko and water and we wrap it with bamboo leaves. Next we steam it. Decchiyoukann has scent of bamboo leaves and simple taste. The shape is rectangle and flat.
3) I introduce history of Decchiyoukann. In the old days, Decchi who is a boy living-in apprentice bought Youkann as a souvenir when they came back their hometown. So it is called Decchiyoukann. The shape is flat so they can carry easily and leaves of bamboo have an antibacterial activity so they can carry long distance. Decchiyoukann is delicious and inexpensive so it was a representative of a popular cake.

Long Boat-Racing

One of the Thai traditions that should be kept alive is ‘Long Boat-Racing’. This tradition signifies the importance of the river to Thai villagers for a long time.

In a ‘Kathin’ meriting-sharing ceremony, Buddhists offer new robe cloth to the monks at the end of the Rains Retreat during October. Traditionally, the local people living along side the river row long boats to carry Buddha images with a kathin in water-borne processions to the local temple. After the kathin ceremony has completed, there is a race of long boats. This is a joyful cultural and religious occasion which brings the local people from different villages together.

‘Khanom Hwan’ or Thai Desserts

‘Khanom Hwan’ or Thai desserts are a Thai tradition that should be kept alive. As hundreds of Thai desserts are popular for their distinct flavours, sweet fragrances, amazing design and authentic colors, the art of ‘Khanom Hwan Thai’ has been passed down from generations to generations.

Most Thai desserts, carrying their names with ‘Thong’(meaning gold) e.g. Thong-yip, Thong-Yod, Foy-thong, represent success, auspices and prosperity. More importantly, their fresh ingredients are made from herbs such as green from cassava roots, violet-blue from blue flowers ‘Dok An-chan’. The colorful appearance makes the desserts delicate, delightful and sophisticated. Accordingly, these desserts are used on special festive occasions such as Buddhist merit-making ceremony, wedding party, new home celebration.

It is not surprising that ‘Khanom Hwan Thai’ requiring time and special skills for preparation has firmly kept its uniqueness among international cuisines.

Advertising All over the World

Companies are eager to sell their products all over the world, so they advertise them internationally. But it is difficult to create global advertising without taking cultural and language differences into consideration.  For example, the Japanese drink, "Calpis" is sold in the US as "Calpico" because "Calpis" sounds like "cow piss".

Read about some other examples in "Advertising Slogans Gone Wrong …" http://english-zone.com/language/ads.html and post a comment about this topic.

In writing new ads, global advertisers need to pay attention to cultural differences.  In some countries such as US. UK, and Germany, ads describe the product and explain why it is better than the others.  But in other countries such as Japan, ads create a positive feeling about the product.  As a result, celebrities often appear in Japanese advertisements.

The topic for your second essay is a TV commercial you love most.  First choose your favorite TV commercial from YouTube  http://www.youtube.com/ and link it to our blog.  Then describe the commercial, what message the producer is trying to convey to the audience, what feature impresses you most and if it shows your cultural features.
